I just thought I would go ahead and make a post about an easy recipe for Chicken Fettuccine Alfredo that I came across and tweaked to make simpler.

First off, preparation time takes about 10 or so minutes (unless you buy everything pre-sliced, such as the mushrooms, cheese and chicken) and total cook time is approximately 25 minutes.

First, you will need the following ingredients:Image

  1. Fettuccine noodles
  2. 50g/2oz butter (I use unsalted or else it may end up being too salty)
  3. 200ml/7fl oz/scant 1 cup double (heavy) cream
  4. 50g/2oz grated Parmesan cheese and Romano cheese (you can add more if you like a lot of cheese)
  5. Chopped chicken breast
  6. 5-6 sliced mushrooms
  7. Some salted butter to sauté the mushrooms in
  8. 1 garlic clove
  9. 2 cups chopped broccoli
  10. Salt and pepper to taste

So what I do is I start with the chicken just to get it out of the way, and while that is cooking I also start up with making the creamy cheese sauce:

Here is what I do with the sauce: firstly, I grate the cheese and have the double cream ready to add once the butter is melted in the pot.  Once the butter is melted (on high heat), I add the cream and whisk that up and then add the grated cheeses and mix all of that together until it is all mixed up and one consistency.  Here are the five steps below:

So now, after that, I set it aside to cool while I cook up the rest of the food.  I steam the broccoli until it is tender.

Now, the mushrooms! 😀  Add salted butter to the pan and sauté the mushrooms for a few minutes, and then add the chopped garlic to it for extra flavour.

I also start on the noodles to get them going until they are done.  Tip: sometimes I break the noodles in half so they aren’t too long when eating the meal.

Now that the noodles are nearly finished, I add all of the vegetables and chicken to the creamy cheese sauce and mix that all together.  I then strain the noodles and return them to the pot.  After that, I add the sauce with the vegetables to the noodles and mix it all up, as shown below:

Then voilà!  It is done!  Now you can enjoy this quick and easy meal of Chicken Fettuccine Alfredo!
